Super Mediterranean salad... in a jar!
Ingredients:
For salad:
1 Large cucumber, peeled & diced
1 Can garbanzo beans, drained and rinsed
1/2 Cup roughly chopped pistachios , shelled
2 Cups cherry tomatoes, diced
1 Large shallot cut into thin rings
8 oz Greek feta, diced
1 Tablespoon capers, drained
3/4 Cup pitted olives of your choice (optional) (I prefer green olives)
1 Heaping tablespoon Fresh herbs — dill, parsley, mint — roughly chopped
For dressing:
2 Tablespoons red wine vinegar
1 Small grated garlic clove
Pinch of regular granulated sugar
Pinch of sea salt
Pinch freshly ground black pepper
Juice & zest of half small lemon
1/4 Cup good quality extra virgin olive oil
Directions:
Combine all the salad ingredients in a large bowl and toss together.
Add all the ingredients for the dressing to a bowl and whisk until smooth an d emulsified.
Spoon about 2 tablespoons of dressing into the bottom of 6 16 oz sterilized mason jars.
Fill each mason jar evenly with the veggie mix.
Screw the jar tops on and store in the fridge until ready to serve.
Before serving, gently shake the jar to mix the salad thoroughly.
Dump the contents out into a bowl, or chow down from the jar with a fork.
