Grandma Moo's baking powder biscuits with honey butter
Ingredients:
For biscuits:
2 Cups all purpose flour
3 Teaspoons baking powder
1 Teaspoon salt
1/3 Cup COLD butter, cut into pieces
3/4 Cup whole milk
For honey butter:
1 Stick unsalted butter, at room temperature
1/4 Cup honey, preferably dark wildflower
1 Pinch smoked sea salt
Directions:
For biscuits:
Preheat oven to 450 degrees, and line a baking sheet with parchment paper.
Sift together the dry ingredients into a bowl.
Add the butter to the flour mixture and mix together using a pastry cutter until the butter is about the size of a pea. Work quickly to keep the butter cold.
Add the milk and stir together until just combined.
Pull the dough into a ball in the bowl.
Add some flour to your work surface, then pour out your dough ball.
Gently roll the dough out with a floured rolling pin into an 8 inch circle. Fold in half. Repeat about 3 times, working quickly so the butter doesn’t melt. (It helps to make these biscuits in a cold room, if possible.)
Roll the rough into an 8 inch square, then cut circles out of the dough using a cookie cutter, jar top or glass.
Arrange the biscuits on the baking sheet. Bake for about 12-14 minutes, or until the tops are golden brown.
For honey butter:
Combine butter & honey until mixed.
Place a piece of parchment paper on the counter, then spoon the butter mix on top.
Mold the butter into a log, then roll the parchment paper, twisting both ends.
Refrigerate butter until solid.
Before serving, place the butter log onto a plate and allow it to come to room temperature once again. Sprinkle the top with a pinch of flakey smoked salt.
