Roasted salmon with mustard, lemon & dill
Ingredients:
1 Large salmon filet, about 1 lb., 1 inch thick.
3 Tablespoons grainy mustard
1 Tablespoon butter
1 Lemon, halved
2 Heaping tablespoons fresh dill
1 Tablespoon olive oil
Sea salt & pepper
Directions:
Preheat your oven to 400 degrees.
Line a baking sheet lined with parchment paper, then smear with a small amount of olive oil.
Put the salmon filet, all one piece, on the sheet skin side down.
Spoon the mustard on top of the salmon and spread into an even layer, including the sides.
Top with 1 tablespoon dill, a sprinkle of salt & pepper and 1 heaping tablespoon of unsalted butter.
Put the lemon halves face down next to the salmon on the baking sheet.
Bake the salmon for about 20 minutes, until just done.
When done, turn over the lemons and squeeze the juice over the salmon.
Garnish with the remaining dill, and serve.
