Cold peanut + chicken noodle salad
Ingredients:
For salad:
1 Cup shredded chicken
10 oz Soba noodles
3 Large radishes, julienned
1 Handful sugar snap peas, julienned
2 Scallions, roughly chopped
1/2 Cucumber, seeded & julienned
Handful of cilantro, roughly chopped
Handful of mint, roughly chopped
1/2 Cup roasted salted peanuts
1 Lime
1/2 Tablespoon sesame seeds
For peanut dressing:
1/2 Cup smooth peanut butter
1/4 Cup soy sauce
2 Tablespoons honey
2 Tablespoons lime juice
2 Teaspoons chili oil
1 Garlic clove, grated
1/2 Tablespoon grated fresh ginger
1 Teaspoon sesame oil
Directions:
Cook the soba noodles according to package instructions, then rinse under cold water.
Put the shredded chicken in a bowl. Add the chilled soba noodles, julienned veggies, scallions, herbs, peanuts, and toss to combine.
Mix together all the sauce ingredients and add to the chicken. Toss until combined and serve with a squeeze of fresh lime and a sprinkling of sesame seeds
