Charred strawberries with burrata + rose hip vinegar
Ingredients:
1 lb Strawberries (Larger is preferable, and not too soft.)
2 Burrata balls
1/4 fresh herbs (basil or mint is best) or edible flowers
Drizzle good quality extra virgin olive oil
Drizzle rose hip vinegar * (see recipe in PANTRY section)
Pinch of flaky sea salt & fresh pepper
Skewers (If using wooden skewers, make sure to soak them for at least 30 minutes before using.)
Directions:
Gently toss the strawberries with 1 tablespoon olive oil, a pinch salt and a pinch pepper.
Heat your grill or campfire grate until it’s extremely hot.
Sear the strawberries until little char marks appear. This will not take long— about 1-2 min only.
Remove the strawberries from their skewers and arrange the strawberries on a platter. Tear the burrata into pieces and place between the strawberries. You can also leave the burrata whole in the center and encircle it with the strawberries. Do whatever you think is best!
Garnish with a little more olive oil, a pinch of salt & pepper, a sprinkling of fresh herbs or flowers, and finish with a drizzle of some rose hip vinegar. Enjoy!
