Juniper honey
Ingredients:
1 Jar good quality honey (I prefer dark honey for this recipe)
1/4 Cup dried juniper berries
Directions:
Pour the honey in a glass heatproof bowl and place it over a pot of water.
Pour the juniper berries into the honey.
Bring the water to a very low simmer and heat the honey for a minimum of 8-10 hours. If the water level becomes low, refill the pot with water if necessary.
It’s very important that the honey doesn’t exceed 105 degrees, otherwise it will start to crystalize. If necessary, use a candy thermometer to maintain a steady temperature of 100 degrees. After 10 hours, the honey will be even darker in color and slightly thicker in consistency.
Strain the juniper berries and store the honey in a sterilized glass jar.
